Leek and feta quiche

On the weekend I made a leek and feta quiche using a recipe from The Happy Larder blog. It was delicious, easy to make and one I will make again.  Here is the link to the recipe and I would certainly recommend it to others.  I made a few changes - I added bacon and parmesan cheese to the recipe (the latter I added with the Cheddar cheese) and as you can see from the photo, I included some cherry tomatoes as I have too many and needed to use some up.   

The pastry is very simple to make, and one I made in advanced (I used the food processor and it took only a couple of minutes) which made the whole dish so much quicker. This pastry can be made and frozen and as Kristen points out on her blog, freeze it in a disc to make it quicker to defrost. There really isn't much need to buy bought pastry if you have this in the freezer!! And for busy cooks - it really can't get much easier!

Home cooked meals are the way to go!!!

Dinner: Leek and feta quiche

Dessert: Bread and butter pudding (made in individual ramekins), these were so yummy!!  I usually pour some cream and golden syrup (for those in the USA who can't get golden syrup, maple syrup works just as well) into the middle as I am about to eat mine. This dessert is not for dieters!!

  1. Sounds delicious. One can buy Lyle's Golden Syrup in the USA from World Market or online -- it's the English equivalent (actually, it's the original). Nick

    Having the pastry ready-made in the freezer (and homemade) sounds wonderful!!
