Duck red curry with rice

This is a simple but tasty curry that isn't very hot but full of flavour. 
Cooked duck is expensive, so this is the sort of dish for special occasions (or you could use chicken instead).

Buy a cooked duck from Asian speciality stores.

1/2 cook duck is suitable for 2 people, 1 whole duck for 4 people.  For vegetarians, this tastes nice with just a heap of veggies. 

All the ingredients you will need. Assortment of vegetables including onion - I used beans,  broccolini, capsicum and onion + garlic (3).  One can of coconut cream, fish sauce and cooked duck.
Heat frypan, add oil and red paste (2 to 3 tablespoons, more if prefer more heat) and cook for 1-2 mins.
Add onions and cook until soft. Add crushed garlic and stir
Add 1 can of coconut cream and simmer for 10 mins.
Add vegetables and mix through.
Mix through one teaspoon brown sugar and one teaspoon fish sauce. Taste, alter if you want more salty (fish sauce) or sweeter (sugar)
Add duck and heat though - simmer for 10 mins. Serve with rice.

  2. LOVE curry! I haven't ever cooked duck though - I imagine it would be really yummy with chicken too, though. :)

    1. This would be very nice with chicken. Don't use the Aldi red curry paste - it has no heat at all so I discovered!!
