Oatmeal biscuits

Dear blogging friends, 

I decided to make my husband some biscuits (cookies or crackers for those who are American) using oatmeal/bran. But I didn't want to buy oat bran (to be truthful, I was too lazy to walk to the shops), so I made my own using rolled oats (the stuff I eat for breakfast). Out came my trusty food processor and zap - I had  bran.  It it much courser that what you buy in the shops, but to be honest I like the texture. It "feels" healthier - more fibre!!!





These were simple to make and quite healthy when you look at the amount of butter in the recipe.  Mine don't look anything like the photo in the recipe as I didn't roll them out as thin and the oat bran is not as fine. It doesn't matter as they taste yummy and hubby loved them, and really that is all that matters!!
  • 100g (3/4 cup) natural oat bran
  • 150g (1 cup) plain flour
  • 55g (1 cup) finely shredded cheddar
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 50g butter, melted
  • 5 tbs water

Like the recipe above, these were also very simple to make and don't look like the biscuits in the recipe. Even though the recipe lists sugar, you don't need to add it - and I replaced the 1 tablespoon of maple syrup with honey and the sweet honey is really delicious in this biscuits 
  • 2 cups oat bran
  • 2/3 cup plain all purpose flour plus more for rolling
  • 1/2 cup caster or superfine sugar (omit or halve if you want traditional oat cakes)
  • 1 tablespoon brown sugar or maple syrup
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 75g melted butter
  • 1/2 cup hot water

  2. oh these look great! I am currently in a biscuit baking phase so I'll have to come back here next time I bake:) I'll probably go for the second one as I can't have cheese:( so hard to find a savoury biscuit recipe that doesn't include cheese :( btw, I met a lovely cousin of yours, sister of Jo a week or so ago! it was so nice to meet her and chat with her:)

    1. Which sister? I think I can guess.

      Most savoury biscuit include cheese. The recipe below would be nice. You could switch the curry powder to Rosemary and paprika .
